Manicotti Recipe!!!

I have never eaten or made manicotti before, but it looked really good!  So I thought, heck, let's try it!  I have really begun to love finding recipes and then trying to make them!  It really is enjoyable to me!  Well this manicotti recipe turned out AMAZING!  I felt like I was in an Italian restaurant haha!  I was really pleased with the outcome!  The recipe tells you hot to make the noodles (which are crepes) and the filling!  I used my own pasta sauce, but I am sure if you want to find a recipe for pasta sauce from scratch it would turn out great!  The only thing this time is I should've added more sauce (I thought I had a lot whoops!), but next time I definitely will!  I halved everything so there were 8 manicottis, but I will give you the full recipe!  Here you go!!

6 Servings (18 crepes)        Prep: 70 min. Bake: 40 min.

Ingredients

CREPE NOODLES:

  • 1-1/2 cups all-purpose flour
  • 1 cup milk
  • 3 eggs
  • 1/2 teaspoon salt
FILLING:
  • 1-1/2 pounds ricotta cheese
  • 1/4 cup grated Romano cheese
  • 1 egg
  • 1 tablespoon minced fresh parsley or 1 teaspoon dried parsley flakes
  • 1 jar (26 ounces) meatless spaghetti sauce
  • Shredded Romano cheese, optional

Directions

  • Place flour in a bowl; whisk in milk, eggs and salt until smooth.
  •    Heat a lightly greased 8-in. skillet; pour about 2 tablespoons batter (I ended up using a 1/2 cup and didn't fill the whole thing up...it was MUCH easier!) into center of skillet. Spread into a 5-in. circle (Swirl the pan in a circle motion off of the burner to spread the batter). Cook over medium heat until set; do not brown or turn (I turned it after the once side was down just to cook the other side...but I had it only there for like 10 seconds). Repeat with remaining batter, making 18 crepes. Stack crepes with waxed paper in between; set aside.

  •   For filling, combine cheeses, egg and parsley. Spoon 3-4 tablespoons down the center of each crepe; roll up.

  •   Pour half of the spaghetti sauce into an ungreased 13-in. x 9-in. baking dish. Place crepes, seam side down, over sauce; pour remaining sauce over top.

  •  Cover and bake at 350° for 20 minutes. Uncover and bake 20 minutes longer or until heated through. Sprinkle with Romano cheese if desired.

You have had manicotti before. Just the shells were not homemade. But I guess you don't even remember. hahaha
