A chef that Joe works with has done a couple cooking shows. At one of the shows, I grabbed the recipes before we headed home for dinner. There was one recipe that caught my eye and Joe agreed that we could make it! He was a little hesitant with some of the ingredients, but is a good sport to try different foods! We made it (which was super simple) and it turned out AMAZING!!! We enjoyed it soo much!! There were soo many different flavors with this recipe, which made it great! We have made it twice so far....yes I am very much behind on posting this haha! This is highly recommended!!
Ingredients:
2-5 oz chicken breasts (pounded)
2 cups seasoned flour (flour with paprika, season salt, pepper, oregano....etc. There are recipes online to explain spices to add!)
Butter
4 T cranberry sauce
3 T orange marmalade
1/4 cup chopped pecans
Whole pecans to garnish
Directions:
Take a piece of plastic wrap, place chicken breasts on and cover with another piece of wrap. With a mallet (we used a hammer because that is all we have), pound the chicken breasts skin side down.
Dredge chicken lightly in seasoned flour and set aside.
Take a saute pan, add butter and heat until near smoking point.
Place chicken breasts in pan (be careful not to burn yourself!).
Turn the head down to medium AFTER chicken is browned on ONE SIDE. This should take 1-2 minutes.
Continue to cook the chicken 3-4 minutes.
Add chopped pecans to the pan. Add the cranberry sauce and orange marmalade and stir.
Garnish with whole pecans and serve.
Makes enough for 2!
