Last night we tried a new recipe...shrimp enchiladas! We found the recipe at
allrecipes and tweaked it a bit! We really liked them! It uses salsa, which we liked, but we may try enchilada red sauce next time! I also didn't take photos....sorry! Here is the recipe with our tweaks! :)
Ingredients
- 4 tablespoons olive oil
- 2 cloves minced garlic
- 1 teaspoon ground ginger
- ground cumin
- cayenne red pepper
- chili powder
- season salt
- 16 large shrimp, peeled and deveined, without tails
- 4 (8 inch) flour tortillas
- 3/4 cup shredded Cheddar and Monterey cheese blend
- 2 cups fresh salsa
Directions
- In a mixing bowl, combine 4 tablespoons olive oil, garlic, ginger, ground cumin, cayenne red pepper, chili powder, season salt, and shrimp. Coat shrimp well with mixture, and marinate 2 hours.
- Preheat oven to 350 degrees F (175 degrees C).
- Spray a 9 inch glass pie dish with non-stick cooking spray. Fill flour tortillas with marinated shrimp, cheese blend and salsa. Fold tortillas into a roll and place in the greased pie dish. Spread a thin layer of salsa on top of the tortillas.
- Bake in a preheated oven for 15 minutes. Bring them out and top with cheese.
- Bake 5 minutes or longer, until shrimp is pink. Serve with side dish (we had Mexican rice) and enjoy :)
