I should've posted this recipe a long time a go....but as you've probably noticed I was very much behind on my posting! I made these again tonight and it reminded me that I need to post this recipe! While Joe and I were in Boise, we went to RED LOBSTER!! I first introduced Red Lobster to Joe on our honeymoon and it "won him over"! He was definitely a Red Lobster fan! We decided to share a meal at Red Lobster! We ordered a meal with salmon, crab legs, and yes I'm sure you've guessed it.....COCONUT SHRIMP!! After just one bite we fell in love! I went to go look for a recipe....the Red Lobster recipe apparently has rum in it?!? No thanks! I am too much of a cheap-o to buy alcohol to cook with! I decided to do my own recipe!! They turned out AMAZING!!! It is a definite must try for shrimp lovers!!!
Ingredients: (the amounts depend on the number of shrimp, so I just estimate)
-uncooked shrimp
-flour
-sugar
-eggs
-bread crumbs (I used the Italian seasoning ones)
-coconut
-oil
Directions: Put canola oil (or whichever oil you have) in a pan. Heat it on about medium heat. Have three different bowls. In the first bowl combine flour and sugar (about half and half). In the second bowl beat your egg or eggs. Then your last bowl combine bread crumbs and coconut (enough coconut that is stands out..maybe about half and half). Take off the peel and tail of the shrimp then dip the shrimp in the bowl order (first bowl - flour and sugar, second bowl - egg, and last bowl - bread crumbs and coconut). Repeat the process so each shrimp is battered twice. Place the shrimp in the hot oil. Let brown on one side then flip to brown on the other side! Serve hot! We didn't dip it in any sauce...it really doesn't need it :)
