Gnocchi!!

On Thursday, for our Italian night, I decided to make Gnocchi!  I had to look up how to pronounce it here.  I totally was pronouncing it WRONG!  I am definitely NOT Italian haha!  Joe and I had both never had Gnocchi before!  It was definitely one of those test dinners to decided whether it would be made again!  I found an easy recipe here!  It was really simple, but I sure felt COOL making pasta :P!!  Our final verdict of Gnocchi:  It has a different texture than the pasta we are use to (probably because they are thicker), but.........WE LOVED IT!!  We definitely would make it again!!
Ingredients:
1 cup instant potato flakes
1 cup boiling water
1 egg
1 1/2 cups all purpose flour (I would suggest slowly adding this.  You may not need all of it)
1/2 teaspoon dried basil
1/4 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon pepper
6 cups water
pasta sauce of your choice
( Optional addition: 1/4 pound of cooked turkey sausage and grated Parmesan cheese for topping)

Place the potato flakes in a large bowl and stir in the boiling water until well mixed. Stir in the egg. Add remaining ingredients and stir together.
Turn out the dough onto a floured surface and knead it about 8-10 times until it forms a soft dough.
Divide the dough into 4 portions. On a floured surface, roll each portion into a rope about 1/2 thick. Cut into 3/4 inch pieces. If you want to make it look prettier then press and roll each piece with a fork (or you can just skip that)
In a large pot bring 6 cups of water to a boil. Cook gnocchi in batches for about 30-60 seconds per batch. When the gnocchi is done it will float to the top. Remove it with a slotted spoon and serve with sauce. Sprinkle with Parmesan if desired.

Serves 4

seriously start a recipe book. lol you know if you save all your recipes you like, you can print them in a "photo book" and its pretty inexpensive. And then you have a hard copy of them and it looks fancy!
