Yesterday for dinner I made homemade pancakes! We have been using bisquick...and let's just say they taste like biscuits...:S Pancakes shouldn't taste like biscuits...yes I love biscuits, but I like my pancakes tasting like pancakes! :) We bought baking powder and baking soda (finally! :)) and that meant I could finally make homemade pancakes! I followed a recipe I found on allrecipes!
Ingredients
- 3/4 cup milk
- 2 tablespoons white vinegar
- 1 cup all-purpose flour
- 2 tablespoons white sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 2 tablespoons butter, melted
- 1 tsp vanilla
- a little bit of cinnamon (optional)
- cooking spray (only if you don't have non-stick pans - i didn't need this!)
Directions
- Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour". Don't freak out over this one...this is just to make homemade buttermilk!
- Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg, butter, vanilla, and cinnamon into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone. Let the batter sit for at least 5 minutes for the batter to fluff up. This helps for fluffy pancakes! When you see the batter is fluffy DON'T MIX IT! Also, don't over mix your batter! Mix it enough that all ingredients are blended, then stop! :)
- Heat a large skillet over medium heat, (and coat with cooking spray-for pans that need it!). Pour 1/4 cupfuls (I used 1/2 cup) of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
